Sometimes you want to go where everybody knows your name and they’re always glad you came.

Other times you want to go where everybody knows your name and they’re always glad to ply you with oxtail donut holes and cocktails seven hours in the making.

This slideshow is in the “other times” camp.

It’s an annotated, virtual glimpse into the goings-on at Knife—the carnivorous sister to Fork in Lincoln Square that’s about to be your new go-to steakhouse north of River North. It opens Tuesday, and here’s the menu.

You’ll walk in, take stock of the dim lighting, classic red leather upholstery and marble bar, and sit down with your important guest (date, client, one-year-older parent), thinking you’ll have a pretty good idea of what’s about to happen. And maybe you will.

Still, might want to get in here to better your odds...
