Well, no need to start now.

Because that's what Uovo is for. It's an enchanting new pasta bar that's open now in Santa Monica, and it's got a killer noodle hookup in Italy. Here's the visual evidence.

Yes, this place actually does just what we were talking about up there. Every day, it gets deliveries of fresh pasta, handmade by sfogline (pasta-making queens) in the restaurant's Bologna kitchen using local red-yolk eggs.

It does all this just so you can pass that information to your date in this small, romantic hollow of warm woods. Perhaps right after toasting the open kitchen with two glasses of Barbera from your seats at the pasta bar. And because it arguably tastes better this way.

As for what you'll be having, it's really anyone's guess. Ours is that you could share the tortellini en brodo before venturing together into the land of lasagna verde and still having room left for tagliatelle with Bolognese.
