Let’s explain our own version of respite: it includes three-cheese pizzas with balsamic aged to scotch levels, fluffy grilled cheese with bacon and red onion jam, and spaghetti with minced clams, mussels, shrimp, scallops, octopus and squid braised in tomatoes, herbs and wine. In other words, our definition of respite is better than most.
