Lib and Let Lib

Thomas Keller’s Pop-Up Spot at Silverado

You’re no longer welcome at the French Laundry.

Sorry.

It’s not you. It’s the renovations.

So to make it up to you, Thomas Keller decided to make you this.

It’s Ad Lib, a casual American pop-up run by the French Laundry team inside Silverado’s Royal Oak Room—they’re now taking reservations for dinner starting next Wednesday. (See the slideshow here.)

So the chefs, the equipment and a lot of the ingredients are here from the three-Michelin-starred restaurant, but a temporary French Laundry this is not. No fixed menus. No wine pairings. Just a simple dinner where you... order things... in a country-club-ish setting. Think: white tablecloths, golf course views and probably a few checkered polo shirts.

Maybe you’ll end up here after a round of golf or a wine-tasting trip up in Napa. Grab one of the tables overlooking the course and admire the view of the wine list. Then, prepare to make some more important decisions:

Tableside steak tartare vs. broiled Alaskan king crab legs.

Braised-beef-short-rib “Wellington” vs. Black Angus chop steak.

Seven-layer coconut cake vs. more seven-layer coconut cake...
