Basically, this little red-and-yellow quick-serve counter is everything that’s right in the world of melted-cheese sandwiches. There’s condiment-colored banquettes. There’s wall-sized pictures of bacon melts. There’s a forward-thinking chef manning the griddle who isn’t afraid to toss the occasional stone fruit into your sandwich (hard not to respect that).
You should probably drop by today for lunch. Because... grilled cheese, that’s why. Get yourself a bubbling swiss melt stuffed with BBQ pulled pork, caramelized onions and jalapeño potato chips (it’s a texture thing). Get yourself a roasted-tomato soup. Do the dunking thing. Wash it down with one of their 100 sodas.
Then: dessert grilled cheese. Yup, that’s a thing. Think mascarpone, strawberry jam, caramel and whipped cream between two slices of cinnamon raisin toast.
Now try to think about anything else for the rest of the day.
