Yes, the king of the unprepared interview wants to do for bagels what he’s already done for suspenders—so he joined a bagel empire to help their westward expansion.

Welcome to The Original Brooklyn Water Bagel Co., a new bagel-ry whose secret weapon is Brooklyn-style water, now open in Beverly Hills.

Before you even get inside, you’ll see the water-manufacturing station, right in the windows up front, under spotlights. They’ve got a 14-step process to replicate Brooklyn water here, which they say is the single most important ingredient in a proper New York bagel. (We always thought it was the guy in the paper cap.)

So starting at 6am, you’ll see plenty of Beverly Hills execs wolfing down their cream cheese and lox as you move toward the counter to peruse your options, from pumpernickel to sunflower to asiago-spinach.

You’ll also want to try the iced coffee—the ice cubes themselves are made of frozen coffee, so your drink won’t get watered down when they melt. (It’s like the Inception of iced coffees.)

And it’s essentially a diner, so if you need a cozy lunch or dinner, Larry’s got you covered with Corned Beef Reuben Scooper Melts (a toasted bagel stuffed with corned beef, sauerkraut, Swiss cheese and dressing) and Pepperoni Pizza Melts.
