A Wine Bar from the Future

Welcome to the future.

You’ll be happy to know it involves coffee, cheese-drenched mussels and dozens of exotic wines hooked up to shiny machines.

Introducing Swill Automatic, a morning-till-late-night café and wine bar that feels like you’ve reached it via jetpack. It’s scheduled to debut Thursday on a nearly desolate Downtown street.

Swill kind of looks like the sort of place the 2001 spaceship would have—it’s bright white and industrial-feeling, with concrete floors and exposed pipes. And in the middle of it all, you’ll find a bunch of wine bottles hooked up to shiny pay-by-the-pour enomatic machines—just waiting for you to load up a prepaid card, buy pours from dozens of different bottles... and share them with a date who’s hopefully better company than HAL.

And we think you’ll like the future’s versatility. This place will be open at 7am for loft-dwellers’ (and their morning-afters’) caffeine needs, and breakfast is served all day on the weekends. And on Friday and Saturday nights, this just might be where you’ll want to pop in after dinner at Church & State next door—washing down a bowl of Dirty Mussels with a few Moroccan reds and Slovenian whites.

Also known as dessert.
