Sometimes, it’s best to just keep things simple.

Four o’clock in the morning is one of those times.

Good thing there are places like this: Rito Loco, the first brick-and-mortar shop from the longtime food truck guys, expected to open Friday with 24-hour weekend service coming soon.

Let’s be clear: you can get lunch here, too. Grab a counter stool in the small brick room, take in some graffiti art on the walls, look up at the chandelier made from brake drums. Then eat your burrito. Voilà: hunger conquered.

But you’ll really want to keep this place atop your lineup of after-hours comfort-food spots. When all you really want is a baby-back-rib burrito. Or fish tacos, with a 10-spice Caribbean rub and chimichurri. Or maybe a rotating special like their beer-soaked-sausage-and-peppers burrito. Whichever burrito you choose, you’ll find no rice and beans inside, just housemade pico de gallo and four cheeses.

And if late-night gets really late, they’ll be throwing some of those meats into burritos with eggs and cheese for breakfast, plus serving up a fruit burrito with local fruit, granola and cinnamon crème.
