As you may have heard, there’s a new kid on the Georgetown waterfront. But being that this kid is Fabio Trabocchi, his newest restaurant, Fiola Mare, is... ambitious by waterfront standards. As in, there’s an unspecified dress code. The dining room looks plucked out of Malibu. And you’ll find at least four good reasons to go there...

After-work drinks and snacks. Just inside, there’s a glass-ringed bar. Grab a high-top facing west and watch the sunset over amaro-laced cocktails and lobster rolls.

A crucial date night. Request one of the teak tables on the nautical-looking, glass-enclosed veranda. Look, there’s the Kennedy Center. Look, there’s the bottle of prosecco you ordered. After a few sips, head over to the fish display, where you can pick your own turbot, langoustines or lobster for them to weigh and grill, then debone/deshell tableside.

A crucial business dinner. The pick of the four private rooms—most done up with regatta photos—is the 12-person chef’s table. Just sit back and let him roll out Italian caviar and dishes like Sea Urchin Panna Cotta with foie gras.

A slightly more casual outdoor lunch. Soon, they’ll have tables on the boardwalk. Even your dog is welcome.

No dress code for him.
