Turns out, Josef Centeno (Bäco Mercat, Bar Amá) was just getting started—Orsa & Winston is his most ambitious spot yet, it’s taking reservations now for its Wednesday debut, and here are the five facts you must know.

It’s not exactly an overdone space.
Just a modest white room with a mural of smeared plum pulp resembling a moonscape. Yes, you’re Downtown.

The food’s a mystery until you’re served.
The restaurant only offers two Japanese-Italian-ish tasting menus—five courses or nine. They change every night, and each course is described with one word. “Rice” might mean uni and razor clam risotto with Koshihikari sushi rice. “Dessert” may be peach granita with ginger sabayon. Surprise. (A family-style menu is also coming.)

Then there’s the wine decision.
Get a full pairing or order as you go by the glass. Or by the $1,275 magnum. Or... just get a couple beers.

Note the four very important seats.
They’re at the counter, facing the open kitchen. That’s where Centeno brings you whatever he feels like, for as long as he likes—there’s no set number of courses. But it’ll be more than five.

This all happens to a punk rock soundtrack.
Your next course is backed by the Misfits, the Clash or the Pixies. Peach granita is so punk rock.
