Pop quiz, would you rather:

A) Eat oysters at a dark mahogany bar somewhere east of La Brea.

B) Eat oysters right by the beach.

C) Not eat oysters.

Well, since it’s obviously not C...

Inhale the fresh, salty brine of Water Grill—yes, that Water Grill—a bolder, brighter outpost of the Downtown legend, potentially opening as early as tonight on Ocean Avenue in Santa Monica.

It’s just one of those things. Synchronicity. Fate. Whatever you want to call it. There’s just something that feels right about Water Grill happening somewhere that’s near... water. So on your next beach day—call it a hunch, you’ll have a beach day soon—here’s where you’ll go beforehand for a couple dozen Kumamotos and Airmails (champagne, rum, lime and honey syrup).

Also, here’s where you’ll go afterward for 20 ounces of lobster, a bowl of chowder and some king salmon with asparagus chutney. This outpost is a whole lot brighter, stuffed with sturdy beams, a copper bar and plenty of sailing books, but the menu is pretty recognizable—no spherified lobster foam or carnitas taco pies. It’s Water Grill, just a bit more casual.

The beach can do that to a restaurant.
