And we’re gonna make a bold prediction: this year, North Siders will get what they’re hoping for.

See, The Roost, Carolina Kitchen, a cheerful little chicken shack, opens tomorrow in Lakeview.

We know, we know. There’s been a fried-chicken boom going on lately. So while we try to figure out a reason why it’s not a good thing, let us tell you about this latest spot.

It’s a simple storefront, the permanent home to the Roost food truck. You’ll find about 30 seats, a communal table and black-and-white photographs of some esteemed fried-chicken purveyors from North Carolina (where the owner is also from). And as you probably guessed, he’s brought his grandma’s biscuit recipe with him.

You choose your flavor: herbed, spicy or Nashville Hot. Sides include housemade potato chips, baked mac and cheese (topped with biscuit crumbles) and a nice peach cobbler.

All in all, nothing too fancy, but when you need a buttermilk biscuit and a fried-chicken taco—which they named a Hillbilly Taco—no questions asked, you’ll be happy it’s here.

You’ve always had a thing for hillbillies bearing tacos.
