Well, first you think, “I’ve got to learn to be less specific.”

Then you correct yourself, “No, it must be run by Le Bernardin’s wine guy.”

Then you triumphantly stroll into Aldo Sohm Wine Bar, a new place run by... you know, now open.

Aldo Sohm (seriously) is the wine director at the legendary French wonderland (right across the courtyard). Here, you get all that vino-y goodness, plus a lot more of the good stuff that doesn’t necessarily work with the seafood-heavy operation over there.

Your sample plan of attack:

Three-glass riesling flights → foie gras lollipop → baked camembert → ’71 Terrantez Reserva D’Oliveiras Madeira.

This all happens on a massive couch (check it in the slideshow), where you’ll laugh, clink glasses and do whatever’s necessary to hide the playbook wristband you’ve fashioned for remembering the aforementioned plan.
