Grab a stool at Rogue & Canon, a cozy corner of amber-tinged, late-night cocktailing in SoHo, opening Monday.

This is from the fellows behind Jimmy at the James Hotel. That canon in the name refers to the classics. The untouchable old favorites. Here, that means Sazeracs and steak frites. Rogues—those are the outliers. The avant-garders. In short: those poached duck eggs and those peanut-butter-topped burgers.

But make no mistake—it’s a bar. Which should be obvious. The low lighting, the copper ceilings. The general The Good, the Bad and the Ugly Western vibe. Oh yeah, and the 26-foot-long bar.

It’s got lamps that look like pistols, classic Navy Grogs (it’s like a rum snow cone) and an applejack/apple liqueur/cranberry juice/cinnamon ice cube concoction by the name of Apple Pie (it’s about time ice cubes discovered spice). And pretty soon, their own house-brewed beers.

Late night is the move here. Say it’s about 2am. You’re not ready for the homebound cab ride yet. You tell everyone you know just the place. You walk in, procure some banquette, a bourbon/peanut liquor cocktail and Welsh rarebit.

This is why people follow you at 2am.
