Even in a city with a virtually limitless array of dining options, some dishes are way too good to miss—they demand immediate consumption. Every month, our feature Served Up gives you the lowdown on a standout dish in the city. Dig in.

Suave as you are, you're not too sophisticated to admit that few things trump a good BLT.

Still, you don't think it would hurt anything if the titan of all American sandwiches—the bacon, lettuce and tomato sandwich—received a little first-class reimagining once and again. Fortunately (or unfortunately), Scottish hothead Gordon Ramsay doesn't think so either. At Ramsay's The London Bar inside The London NYC, the BLT is reborn as...B.L.T., a fancy-tasting dish served in a martini glass.

Gone are the pieces of slightly burnt toast, replaced by a petite silver spoon and three layers of madman-conceived delicacy:

  • Layer 1: A translucent, red-orange tomato geleé (think V8 meets Jell-O...an acquired taste).
  • Layer 2: White cream infused with slender onion rings and succulent shards of bacon.
  • Layer 3: A tangy chilled lettuce velouté: blended iceberg lettuce poured over cream, like chocolate syrup on a sundae.

The result? A creamy dish that couldn't be further from the experience of eating a BLT sandwich, but intriguingly enough, tastes just like one. Frou-frou sandwich—or manly dessert? You decide.


It's true that nothing beats a real slab of bacon, but if you'd prefer to try to drink your sandwich instead of eat it, this should quench your palate right.
