Fried gelato.

We’ll give that a minute to sink in.

...

Good. Productive minute. Now, before you do something drastic like quit your job, renounce your possessions and dedicate your life to the pursuit of the above, we’ll make things easier on you.

By sharing this very real, very obtainable version from Chicago’s Parlor Pizza Bar. It all begins with salted caramel gelato. That gets dipped in pieces of Cinnamon Toast Crunch, which is important for what comes next—flash frying the whole thing in hot oil so that it’s crunchy on the outside but cold on the inside. From there, the dish is topped with whipped cream, caramel sauce and fresh strawberries.

Go ahead and book a trip to Chicago, if you haven’t left already. Or try implementing your newfound knowledge and doing all of the above at home.

Oh, and just FYI, Sunday is National Ice Cream Day. Not that you need a fake-holiday-as-reason to show your ice cream appreciation. Because you humbly give thanks to it 365 days a year, and you’ll eat ice cream (same goes for gelato) whenever you damn well please.

Maybe this Sunday, even.
