A New Grilled Cheese Bar Open Till 5am

We're not sure what you've got planned—and we hate to throw a monkey wrench in your itinerary if it includes runway models—but you might want to rethink the whole thing.

Because grilled-cheese news doesn't get any bigger than this.

Make room for Cheesme, a new late-night grilled-cheese bar in South Beach, soft opening this weekend.

Think of this little place as your new hangover-abating pit stop. Located in the old Hed Kandi spot, it's within walking distance of most of the clubs on Washington Avenue and open till 5am every night, so you'll come here after polishing off that bottle at Mansion, or to refill the tank after a steamy night of Brit pop at Heathrow.

The menu is sort of like an intoxicated person's dream: simple-looking yet thorough. To construct your grilled delicacy, you can choose from 16 types of cheese (Camembert, fontina, Roquefort), a dozen breads (Texas toast, ciabatta), plus meat insertions like Kobe beef, Applewood smoked bacon and poached lobster tail. Also helping soak up the beer are six types of fries, which can be smothered in everything from wasabi mayo and truffle mayo to cheddar cheese and Kobe chili.

We are definitely pro-smother.
