Bone-In Sirloin and Housemade Gin in SoBe

None 10 Photos Quality Meats
There are some nice upsides to being the unofficial sixth borough.

For one, the bone-in sirloin.

Give a warm, tropical welcome to Quality Meats, an NYC-imported temple of steak, charcuterie and housemade gin—it’s opening Friday in South Beach. Here are the four most important elements.

1. There’s a wraparound terrace. With teak tables, canvas chairs and a lounge-adjacent patio with a rolling bar cart. But inside’s fine, too. Your steak will taste just as good in a hidden six-seat alcove or among old butcher aprons made of chain mesh at the bar. (See the slideshow.)

2. The meat. They’re not messing around. Aged bone-in sirloin. Rib steaks. Charcuterie boards teeming with soppressata, duck bacon and their very own mortadella made with pepper jack and pistachios. (See the menu.)

3. About that gin. They make it on the premises using a dry infusion. Fancy stuff. But you also have three drinks on draft, like the Negroni Soda with sparkling gin, Campari and sweet vermouth.

4. Private dining. There are three rooms for that upstairs. But you’ll have to wait a bit longer for that.

The things you do for your steak.
