If there’s one thing they’re good at, it’s making supermodels.

If there’s another, it’s making steaks.

If there’s a third, well, you probably stopped listening after supermodels and steaks.

But it’s sugarcane.

Anyway, back to the supermodels and steaks...

Welcome to Doma Polo Bistro, a sexy new chophouse that’s full of really attractive people and really Argentine beef, opening this Friday in Downtown.

What you have here is a deeply reverent ode to all things Argentine. We’re talking cattle-branded tables. Horse-stall-housed booths. Rustic wood walls covered in riding crops, helmets and mallets (yes, these guys have a thing for polo).

It’s the kind of place where you’d go to celebrate a big company merger. Or to celebrate just having witnessed a four-hour Springsteen concert at the Triple A. Grab a seat on the outdoor patio (of course they have an outdoor patio) and summon over... steak, naturally. But also, handmade pastas, hearty beef stews and tiramisu drenched in Coke. The soda, just to be clear.

And if you’re eating with a big group (as is often the case when rib eyes are prominently involved), ask to reserve the mesa de campo. It’s like a cross between a chef’s table and an authentic Argentine family table.

Which means: maximum steak surface area.
