So you’ll want to know about the newly reborn Cantina Beach, a waterfront tiki hut for romantic date nights with the potential to turn tequila-crazed, opening today at the Ritz-Carlton Key Biscayne.

Now, first of all, you may be thinking: Cantina Beach is not new. And this is more or less true. But a kitchen fire destroyed it this past summer, and it has only now risen from the ashes as a place to order up oceanfront Mexican classics and a Millionaire’s Margarita (Gran Patrón Platinum, 150th Anniversary Grand Marnier, lime juice).

But we’re getting ahead of ourselves. You’ll start by grabbing a date who gets vaguely aroused by the sight of a thatch roof, claiming a table near the glowing fire pit, kicking off your shoes (you’re practically on the beach) and asking for the En Molcajete Series: a trifecta of guacamoles served with tortilla chips and prepared tableside by the restaurant’s new guacamolier (avocado is the new wine).

Once suitably guac’ed, you’ll move on to authentic Mexican dishes like Huachinango (grilled yellowtail snapper), pairing them with cocktails made with over 85 types of tequila. And if you need any help deciding, you can always consult the on-site tequilier.
