Here’s José Andrés’s Take on Peru

If you’ve pledged to avoid pisco cocktails, ceviches and beef stew in 2015, then things are about to get a lot harder for you.

Because this place now exists.

Here’s China Chilcano, a gorgeous nod to Peru and its Asian influences by José Andrés, soft-opening tonight amid his mini-empire in Penn Quarter.

And here are three things to know:

It’ll be difficult to pick a table. Amid all the wall murals, neon art on the ceilings and lights hanging from ropes, you’ll find a big round table surrounded by bamboo with a lazy Susan in the middle. And a six-top sunken into the floor. (See it here.)

You’ll be eating sushi. The former chef from SushiKo is working the ceviche bar, turning out inventive maki rolls with Peruvian potato puree and ceviche with sweet potato and leche de tigre. Of course, there’s also the lomo saltado beef stew.

You’ll be drinking pisco. They hope to have a list of 100 before too long. Some piscos will find their way into infusions with sour cherries or hot peppers. Others into cocktails with vanilla and persimmon. Or check out the six Peruvian beers, including a quinoa Kölsch.

Excellent source of protein.
