But let’s ferment the thing already.

Keep doctors away at Bishop Cider Co., Dallas’s first cidery and a generally comfortable spot to hold court and partake in alcoholic, fruit-based beverages, now open in Bishop Arts.

This place has been a long time coming. But now, it’s here in all its relaxed-wood-and-white-brick glory. So drop in and say hello. Introduce yourself to Joel. He’s the man who curated the cider list (it’s around 50 bottles now and is moving toward 100), and he’s also the man who’ll be brewing three in-house varieties. Good man, that Joel.

For now, you’ll want to post up at the wooden bar top and peruse the menu. It’s sporting sourced-from-everywhere bottles, cans and 750 mL vessels for sharing or not sharing. If you can’t decide, try a tasting flight. It’s hard to see that going awry.

And in about a month, look forward to house-brewed ciders like Cideways, a hoppy, citrusy number. And Cat Scratch Fever, which is infused with jalapeños and catnip.

Yep, that old combo.
