April 16.
It’s easy to be cynical, but happy National Eggs Benedict Day just the same.
And we mean that. Because like us, you still believe in National Eggs Benedict Day miracles.
Just look:
Eggy’s,
a reimagining of a classic Chicago diner, opens today near Millennium Park. And yes,
Virginia, there is hollandaise.
It’s nestled in that coved Shangri-La of a neighborhood known as Lakeshore East. You’ll have a marvelous
view of the morning sun glinting off the Aqua building... and off your roasted-pork-and-poblano
omelet.
It comes by way of the folks behind Custom House Tavern, so that guy making your Adam & Eve on a
raft—yeah, he went to the Culinary Institute of America. Apparently, he minored in hash browns
there.
Despite such prestige, this diner does exactly what you need a diner to do: fill you with hot coffee and
french toast on Sunday morning. (Coffee egg creams are standing by as backup.)
However, this is also good for quick working lunches over a
Hot Chili Beef Dip. Or assemble
visiting relatives here for cinnamon pecan sticky buns and fried Wisconsin cheese curds before sending them
off to conquer Navy Pier with their trusty Segway guide.
And when dinner rolls around in May, the chef will
offer a nightly three-course family-style meal. Monday, as it turns out, will be lasagna
night.
Conveniently, you and lasagna already have a standing appointment.
