We’ll keep this simple. It’s National Pancake Week. And while Aunt J. and the pancake lobby are most likely behind this “holiday,” sitting this one out to protest Big Syrup isn’t on your agenda. Here then: the only cakes you need to concern yourself with for the rest of the week...

WEDNESDAY: WRECKING BAR BREWPUB

Duck Confit Pancakes

The guys at Wrecking Bar make their own beer. And that’s fantastic. But for this week only, they’re also making Munich Malt Pancakes—they’re pretty much just like regular ones, only with more candied tangerines, pea shoots and duck confit. Eating with your pinkie in the air strongly recommended.

Cilantro Corn Pancakes

By the time Thursday rolls around, you’ll be looking for pancakes with corn on them. You know, your old Thursday tradition. Good news: Highland Bakery has those. And they’ll also be topping them with black beans, cilantro, sour cream, salsa, cheese and two fried eggs. Which is insane. But hey... Thursday.

If you’re going to have pancakes for dinner, one of two choices should be made: 1) having someone top them with pulled pork shoulder, coleslaw and BBQ sauce, or 2) having someone top them with pulled pork shoulder, coleslaw and BBQ sauce. Choose wisely.

The Ultimate Stuffed Pancake

Brunch, as you know by now, is not a game. Which is why the good Samaritans over at Rosebud have taken the liberty of generously stuffing a pancake with sausage, bacon and scrambled eggs for your amusement. And presumably consumption.

Chicken and Pancakes

This may be the best thing to happen to chicken and waffles since... itself. And yes, it’s basically the same, only sub out those waffles for cornmeal pancakes and throw in some sunny-side-up eggs for good measure. Gladys Knight can be there for you the rest of the week.
