Pie One On

A New Emporium of Pie and... Pie

UD - Pie Shop There’s nothing wrong with doing one thing and doing it well.

The French: toast.

Politicians: amateur photography.

Bill Nye: science.

But we noticed something lately... there’s not nearly enough players in the pie-only game.

Unacceptable.

Enter Pie Shop, your new one-stop depot for all things classic American pie (literally, just that), opening Wednesday in Buckhead.

Maybe you’ve heard of this before—the whole thing started a while back when Mims Bledsoe (a pie-making name if there ever was one) decided to start up an online-only shop, doling out made-to-order pies like lemon meringue, Georgia peach and Watermelon Chiffon with Macadamia Cookie Crust.

The good news: she’s still doling those things out. The better news: her name is still Mims (sorry, we’re just really excited about that name). Also, starting next week, instead of placing your order online, you’ll head to Buckhead and find the brick and mortar version (the entrance is in the back). You’ll quickly find that pie is the point here—there’s a bakery case, a few tables, some baking equipment. But other than that... pie.

Which is perfect, because those Two-Bite Mojito Tarts would be ideal for your picnic date at Tallulah Falls. And when Mims launches “late-night pie” in mid-July (she’ll be slinging until 1am on the weekends), that Lattice-Topped Blueberry Rhubarb number is a shoe-in for late-night power nosh of the year.

Night-rhubarb... do it.
