menu in the (much) bigger space and David Lynch (the heavyweight NYC sommelier, not the creepy director) in
charge of the Italian-centric wine list.

Friday marks the beginning of One Market's weekly whole-animal menu. This weekend features five wine-paired
courses of goat—think: sausage, spit-roasted leg, neck ragu, roasted rack and loin and goat cheese
cake. Pig, duck, lamb and cow are lined up for upcoming weeks—just don't tell them yet.
